1st LEVEL SUGAR
We introduce you to the basics of sugar work. Techniques: Pulled sugar, blown sugar, rock sugar, ribbon sugar. Each student will make show pieces.
PASTILLAGE
Techniques in modeling, and building a showpiece. Air brush and painting techniques, paysages and personages, etc.
2nd LEVEL SUGAR
More intensive work to pull sugar ribbon; blow sugar, including fruits, animals, personages; fast amenity and showpieces.
SPECIAL HOLIDAY CLASSES
EASTER

Chocolate modeling, and many different presentations of chocolate eggs. Sugar techniques: ribbons, flowers.
3rd LEVEL SUGAR
Good for competition preparation
Each student chooses a theme. We look at color, balance, proportion and size. This class includes chocolate and sugar work.

MOTHER'S DAY

Chocolate and sugar work. Small and large show pieces for buffets.
INTRO TO CHOCOLATE
Chocolate tempering (dark, white, milk), structure preparation, carving, modeling, air brush and painting techniques, as well as incorporating a piping bag.
SPECIAL / SILKSCREEN
You will learn how to make silkscreens. We will make models from different materials. You will learn traditional and modern techniques. Each student will make a showpiece in either chocolate or pastillage.

REGISTRATION
