| 2nd LEVEL SUGAR More intensive work to pull sugar ribbon; blow sugar, including fruits, animals, personages; fast amenity and showpieces. | SPECIAL HOLIDAY CLASSES EASTER Chocolate modeling, and many different presentations of chocolate eggs. Sugar techniques: ribbons, flowers. |
| 3rd LEVEL SUGAR Good for competition preparation Each student chooses a theme. We look at color, balance, proportion and size. This class includes chocolate and sugar work. | SPECIAL HOLIDAY CLASSES MOTHER'S DAY Chocolate and sugar work. Small and large show pieces for buffets. |
| INTRO TO CHOCOLATE Chocolate tempering (dark, white, milk), structure preparation, carving, modeling, air brush and painting techniques, as well as incorporating a piping bag. | SPECIAL / SILKSCREEN You will learn how to make silkscreens. We will make models from different materials. You will learn traditional and modern techniques. Each student will make a showpiece in either chocolate or pastillage. |
